1 pound all-purpose potatoes
1 tablespoon olive oil
Kosher Salt

1. Preheat oven to 400°.
2. Clean Potatoes and cut them into small bite size pieces.
3. Add potatoes to sauce pan with 1 tsp kosher salt and cover with about an inch of cold water.
4. Bring to boil over high heat and then reduce to simmer and cook 4 to 5 minutes, just until edges are soft but centers are still hard.
5. Drain potatoes and add them to a large mixing bowl.
6. Add olive oil and kosher salt to taste.
7. Using a plate, cover the bowl, and shake until sides of potatoes have been roughened up a bit.
8. Spread potatoes in a single layer over perforated baking sheet that has been spray with cooking oil spray.
9. Bake 30 to 40 minutes, flipping every 15 minutes, until potatoes are evenly browned and crispy.
10. Serve immediately.
