Pineapple Upside Down Cake

Ingredients:
1/2 C Butter
1 C Brown Sugar
1 Can Sliced Pineapple
8 Maraschino Cherries
2 Eggs
1 C Sugar
1 tsp Vanilla
1 C Flour
1 Tsp Baking Powder
Pinch Salt
1/2 C Scalded Milk
1 Tbl Butter

Directions:
1. Preheat over to 350 degrees.
2. Melt butter in skillet.
3. Add Brown Sugar.
4. Top with Pineapples and Cherries.
5. Beat eggs, sugar, vanilla, flour, baking powder, and salt until thick.
6. Add scalded milk with butter and mix.
7. Pour evenly over fruit.
8. Bake at 350 degrees for 35 minutes.
9. Turn over onto flat serving dish.
10. Serve with ice cream or whipped cream.

Cook Time: 40 Minutes
Ready In: 60 Minutes

Sugared Pecans

Ingredients:
1 lbs Pecan halves
1 stick butter
2 egg whites, stiffly beaten
1 cup sugar
Dash of salt

Directions:
1. Beat egg whites, and fold in sugar and a dash of salt.
2. Add pecans and stir.
3. Melt the butter on a sheet cake pan in the oven.
4. Place the pecans in a single layer on the pan.
5. Bake at 350 degrees for 30 minutes. Stir and flip every 10 minutes.

Cook Time: 30 Minutes
Ready In: 45 Minutes

Recipes Critic Review: These are awesome! Truly they are delicious. If only they could be calorie free. I make these a lot at Christmas and give them away as gifts. Everyone loves them and can't get enough!
